Curried Zucchini Soup



I used my new crockpot for the first time today. I made curried zucchini soup and it was delicious. The soup was very easy to make. After what you see in the pot cooked for 5 hours, I put it in the food processor and voila! Crockpot plans for next week include mushroom barley soup. I think soup and some nice crusty bread is the perfect winter meal.

Mmmm. Looks so good! What kind of crock pot did you use? Do you like it? We made a fish stew tonight--Cioppino---so yummy. I love slow cooked comfort food!

I used the Cuisinart CSC-400. It was more expensive than others, but it had some cool features like a retractable cord, a warming feature, and automatic shut off. I love it!

Fist stew? Oh my, that sounds delicious. Where'd you get the recipe from? Now I want to make it!

I will admit that I was not feeling it...UNTIL I read that you pureed it. *double duh* Sounds yummy (if you like curry).

Yeah, I was a bit apprehensive at first too, but then when I pureed it the overall look vastly improved.
