On Friday I made Roasted Eggplant and Zucchini Lasagna. It was delicious. Since we are now back to buying only organic food, I've decided to try to make one or two meals like this a week. That way we can freeze leftovers and/or Steph can take them to work with her for lunch. I got the recipe from Cooks Illustrated.
